I found a nice, clear setup that works fine, except for one thing - the standard WoW UI lists interruptible and uninterruptible casts from mobs with yellow/grey bars, however, ElvUI seems to be using the same colour for both and admittedly, unless I know spells by heart, it makes ... Certain abilities (assize in image) have a duration bar. Try using Quartz for cast bars and see if it satisfies your needs. You could try setting up a custom cast bar with something like WeakAuras or TellMeWhen.

You might need to get an inactive background texture behind it to stay on to show where it is, I’ve never used weakauras for a cast bar.
